Le Clarence Paris (2020)
Every month, the French gastronomic magazine Yam Cuisine profiles a star chef and his dishes. Most recently, author Leslie Gogois was a guest of star chef Christophe Pelé. Pelé, decorated with two Michelin stars, has made "Le Clarence" in Paris one of the best gastro addresses in France. Whether it's red shrimp, sea urchin or pigeon with squid sauce, it's always served à la minute, on "Adonis" from Nymphenburg, whose fine serrated rim was painted an appetizingly fresh green especially for the Paris restaurant.
